Quinoa Tabbouleh
1 cup quinoa (uncooked)
2 cups fresh parsley
1 cup mint
6 green onions
3 medium tomatoes
juice of one lemon
1/3 cup olive oil
salt and pepper to taste
- Cook the quinoa as to package directions.
- Finely chop the parsley and mint.
- Slice the green onions cross wise, including the greens.
- Core and coarsely chop the tomatoes.
- In a serving bowl, toss the quinoa with the parsley, mint, onion, tomatoes and lemon juice. Stir in the olive oil and season with salt and pepper.
