Healthier Zucchini Brownie
1/2 apple sauce
2 small or medium mashed bananas
1 1/2 cup sugar
2 tsp vanilla
1/2 cup cocoa powder
1 1/2 tsp baking soda
1/2 tsp salt
2 cups finely shredded zucchini
2 cups flour
1/2 cup walnut pieces
- Preheat the oven to 350 and grease a 9x13 pan.
- Mix together the apple sauce, mashed bananas and sugar.
- Add the vanilla and cocoa powder and stir until combined.
- Then add the baking soda, salt and zucchini. Mix together.
- Finally add the flour and walnuts, stirring until everything is well blended.
- Spread evenly into the pan and bake for about 25 minutes. The brownie should spring back when it is touched.
