Banana Muffins
2 cups whole wheat flour
1/2 cup flax seeds or ground flax
1/4 cup sugar
1/4 cup honey
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
pinch of nutmeg
1 egg
3/4 cup milk
1/3 cup pureed apples or applesauce
1/2 tsp vanilla extract
1 cup mashed bananas
- Whisk together the dry ingredients in a large bowl.
- In a separate bowl, beat the egg and whisk in the milk, apple, vanilla and honey.
- Add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the bananas.
- Divide into muffin tins.
- Bake at 400 for 15-18 minutes or when a toothpick comes out clean.
